These are what I was cooking last night.
( One Step Lasagna with Sausage and Basil ) I liked this one. I have a Cooking Light recipe for lasagna that I really like, but it's just a pain in the butt. This one is fairly quick, all things considered. A few notes:
1.) My cookbook mentions not to use the no-boil lasagna noodles. My top noodles ended up kind of hard, and looking at the reviews, other people have used the no-boil ones and been happy with the results.
2.) Make sure you cover the pan VERY tightly with foil.
3.) Do not forget the baking tray underneath your lasagna. Your oven will thank you.
And then for dessert, I made ( White Chocolate Mousse with Dark Chocolate Sauce ) This was very little work for the amazing dessert that resulted. I recommend (personal preference) putting the sauce on after the four hours and then refrigerating- it hardens to sauce to a ganache like texture, which I really like.
Both of these recipes have the huge attraction that all the prepwork can be done well ahead of time, which is great for anyone who wants to use them for entertaining. Serve TGIFriday's spinach and artichoke dip for an appetizer with some good chips (I swear, every time I serve that stuff everyone raves and asks for my recipe, everytime I make it, I get a few compliments, but not many), salad (bagged if you're pressed for time), good bread or garlic bread, and then the mousse for dessert. Everything can be done ahead of time, and all you have to do before dinner is nuke the dip, put the lasagna in the oven, put the bread in the oven, and prep the salad if you haven't already.
